Croissant Breakfast Sandwiches are buttery, flaky croissants filled with eggs, cheese, and your choice of savory meats or veggies. Perfect for brunch, meal prep, or on-the-go breakfasts, they’re customizable, satisfying, and easy to make ahead.

Ingredients

  • 4 croissants (fresh or bakery-style, halved)
  • 6 large eggs
  • 2 tablespoons milk or cream
  • Salt and pepper, to taste
  • 1 tablespoon butter or oil (for cooking eggs)
  • 4 slices cheese (cheddar, Swiss, provolone, or American)
  • 4 pieces cooked bacon, sausage patties, or sliced ham
  • Optional: sautéed spinach, sliced tomatoes, or avocado slices
  • Optional: hot sauce or aioli
  • Optional: fresh herbs (chives, parsley, basil)
  • Optional: caramelized onions or roasted red peppers

Instructions

  1. Preheat oven to 350°F (175°C) if warming assembled sandwiches.
  2. In a bowl, whisk eggs with milk, salt, and pepper. Scramble in butter or oil over medium heat until soft and fluffy.
  3. Cook chosen breakfast meat (bacon, sausage, or ham), if not already cooked, and set aside.
  4. Slice croissants horizontally and lightly toast if desired.
  5. Assemble each sandwich by layering cheese, scrambled eggs, and meat on the bottom half of the croissant.
  6. Add optional toppings such as spinach, avocado, or tomato. Cover with top half of croissant.
  7. Wrap sandwiches in foil and bake for 5–10 minutes if desired, to warm through and melt the cheese.
  8. Serve immediately, or cool and wrap for storage.
