This Crockpot Sausage & Tortellini Soup is the ultimate comfort food, combining savory sausage, cheesy tortellini, and a creamy broth that’s perfect for chilly days. With minimal effort, this slow-cooker recipe makes a hearty, flavorful soup that’s sure to satisfy your hunger and warm you up.

Ingredients

  • 1 lb Italian sausage (ground or in links)
  • 1 (9 oz) package cheese tortellini
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • 4 cups fresh spinach
  • 1 tbsp olive oil

Instructions

Cook the sausage

  • If using sausage links, remove the casing and crumble the sausage.
  • In a skillet over medium heat, cook the sausage until browned, breaking it apart as it cooks. Drain any excess fat and set aside.

2️⃣ Prepare the vegetables

  • Dice the onion, carrots, and celery. Mince the garlic.

3️⃣ Assemble the soup

  • In your crockpot, add the cooked sausage, diced onion, carrots, celery, garlic, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir to combine.

4️⃣ Cook

  • Cover and cook on low for 4-6 hours, or on high for 2-3 hours.

5️⃣ Add the tortellini

  • About 30 minutes before serving, stir in the tortellini.

6️⃣ Add cream and spinach

  • Once the tortellini is cooked, stir in the heavy cream or half-and-half, then add the fresh spinach. Let it cook for an additional 5 minutes until the spinach wilts and the soup becomes creamy.

7️⃣ Serve and enjoy

  • Taste and adjust seasoning as needed. Ladle the soup into bowls and serve hot.
