Crockpot Marry Me Chicken is a creamy, savory dish featuring tender slow-cooked chicken in a rich sauce made with sun-dried tomatoes, garlic, Parmesan, and cream. It’s easy to prepare and full of bold, comforting flavors.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt, to taste
  • Black pepper, to taste
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp cornstarch + 1 tbsp water (optional, for thickening)
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Season chicken with salt and pepper and place in the bottom of the crockpot.
  2. In a bowl, whisk together heavy cream, chicken broth, Parmesan cheese, minced garlic, Italian seasoning, and red pepper flakes (if using).
  3. Stir in the chopped sun-dried tomatoes.
  4. Pour the sauce over the chicken in the crockpot.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is fully cooked and tender.
  6. If you’d like a thicker sauce, whisk 1 tbsp cornstarch with 1 tbsp water and stir into the crockpot. Cook on HIGH for an additional 15–20 minutes.
  7. Garnish with chopped basil or parsley and serve hot.

Notes

  • Use heavy cream for best results, as it’s less likely to curdle during slow cooking.
  • Add spinach or kale during the last 30 minutes for extra greens.
  • Let the chicken rest a few minutes before serving to allow juices to redistribute.
  • This dish pairs well with pasta, rice, or mashed potatoes.
