Crockpot French Toast Casserole is a cozy, hands-free breakfast made in your slow cooker. Soft bread cubes soak in a rich cinnamon-vanilla custard and cook to golden, fluffy perfection—perfect for serving with maple syrup, powdered sugar, or fresh fruit at brunch or holidays.

Ingredients

  • 1 loaf brioche, challah, or French bread, cubed
  • 6 large eggs
  • 2 cups milk or half-and-half
  • 1/4 cup brown sugar
  • 2 tbsp granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • 2 tbsp butter, melted (for greasing and drizzling)
  • Optional toppings: maple syrup, powdered sugar, berries, chopped nuts, or whipped cream

Instructions

  1. Prepare crockpot: Grease the slow cooker insert with butter or non-stick spray.
  2. Add bread: Place cubed bread evenly into the crockpot.
  3. Make custard: In a large bowl, whisk together eggs, milk, brown sugar, granulated sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  4. Assemble casserole: Pour the egg mixture evenly over the bread, pressing gently so all cubes absorb the liquid.
  5. Add butter: Drizzle melted butter over the top for richness.
  6. Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–2½ hours, until the center is set and edges are golden.
