Crockpot Chicken and Mushrooms is a creamy, savory slow-cooked dish featuring tender chicken and earthy mushrooms simmered in a rich, flavorful sauce. It’s an easy comfort meal perfect for weeknights or cozy family dinners.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 8 oz fresh mushrooms (white or cremini), sliced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (10.5 oz) cream of mushroom soup or 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil or butter
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken with salt, pepper, and dried thyme or Italian seasoning.
  2. In a skillet, heat olive oil or butter over medium heat and sear the chicken on both sides until lightly golden (optional for extra flavor).
  3. Place the sliced mushrooms and chopped onions at the bottom of the slow cooker.
  4. Add the seared chicken on top of the vegetables.
  5. In a bowl, whisk together the cream of mushroom soup (or heavy cream), chicken broth, and minced garlic until smooth.
  6. Pour the mixture evenly over the chicken and mushrooms.
  7. Cover and cook on low for 5–6 hours or on high for 3–4 hours, until the chicken is tender and cooked through.
  8. Remove the chicken and stir the sauce to combine and thicken slightly. If needed, let it cook uncovered for 10–15 minutes.
  9. Serve the chicken topped with the mushroom sauce and garnish with chopped parsley.
