Ingredients

  1. 2 pounds stew beef or beef tips
  2. 1 medium onion, diced
  3. 3 cloves garlic, minced
  4. 2 cups beef broth
  5. 1 tablespoon Worcestershire sauce
  6. 1 tablespoon soy sauce
  7. 1 can (10.5 oz) cream of mushroom soup
  8. 2 tablespoons cornstarch
  9. 2 tablespoons water
  10. Salt, to taste
  11. Black pepper, to taste
  12. 12 ounces egg noodles
  13. 2 tablespoons butter or olive oil (optional, for noodles)
  14. Chopped parsley (optional, for garnish)

Instructions

Add the beef tips to the crockpot.

  1. Dice the onion and mince the garlic, then add them on top of the beef.
  2. In a bowl, mix the beef broth, Worcestershire sauce, soy sauce, and cream of mushroom soup until combined. Pour the mixture over the beef.
  3. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the beef is tender.
  4. About 30 minutes before serving, mix the cornstarch with water to make a slurry. Stir it into the crockpot to thicken the gravy.
  5. Cook the egg noodles according to package instructions. Drain and toss with butter or olive oil if desired.
  6. Serve the beef tips and gravy over the noodles. Garnish with parsley if using.

Notes

  1. Use low-sodium broth and soy sauce to control saltiness.
  2. For a creamier texture, stir in sour cream or cream cheese before serving.
  3. Can be served over mashed potatoes or rice as a variation.
  4. Freezes well—great for meal prep.
