Add the beef tips to the crockpot.
- Dice the onion and mince the garlic, then add them on top of the beef.
- In a bowl, mix the beef broth, Worcestershire sauce, soy sauce, and cream of mushroom soup until combined. Pour the mixture over the beef.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the beef is tender.
- About 30 minutes before serving, mix the cornstarch with water to make a slurry. Stir it into the crockpot to thicken the gravy.
- Cook the egg noodles according to package instructions. Drain and toss with butter or olive oil if desired.
- Serve the beef tips and gravy over the noodles. Garnish with parsley if using.
