Crispy Seasoned Cottage Fries are thick, round potato slices that are perfectly seasoned and baked or air-fried until golden brown and crisp. They’re an easy and delicious side dish ideal for burgers, sandwiches, or dipping.

Ingredients

  • 2 large Russet or Yukon Gold potatoes
  • 2 tablespoons olive oil or vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried parsley or Italian seasoning
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • Optional: 2 tablespoons grated Parmesan cheese
  • Optional: 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes. Slice into 1/4-inch thick rounds. Do not peel.
  3. Place slices in cold water for 15–20 minutes to remove excess starch. Drain and pat dry completely.
  4. In a large bowl, toss dried slices with olive oil, garlic powder, onion powder, smoked paprika, dried parsley, salt, pepper, and cayenne (if using).
  5. For oven: Arrange slices in a single layer on a parchment-lined baking sheet. Bake for 20–25 minutes, flipping halfway, until golden and crisp.
  6. For air fryer: Arrange slices in a single layer in the basket (work in batches). Air fry for 14–16 minutes, flipping or shaking halfway through.
  7. Remove and sprinkle with Parmesan cheese (if using) and extra salt if desired. Serve hot with your favorite dipping sauce.

Notes

  • For best results, don’t skip soaking and drying the potatoes—it helps with crispiness.
  • Don’t overcrowd the baking sheet or air fryer; work in batches if needed.
  • Serve immediately for maximum crunch.
