Ingredients

  • 8 chicken drumsticks
  • 2 stalks fresh lemongrass (white part only, finely minced or pounded)
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon vegetable or sesame oil
  • Lime wedges and fresh herbs (optional, for serving)

Instructions

  1. In a bowl, combine lemongrass, garlic, fish sauce, soy sauce, brown sugar, black pepper, and oil. Mix well to create the marinade.
  2. Add the chicken drumsticks and coat them thoroughly in the marinade. Marinate for at least 30 minutes or up to overnight in the refrigerator.
  3. Preheat the air fryer to 375°F (190°C).
  4. Arrange the drumsticks in a single layer in the air fryer basket, leaving space between each piece.
  5. Air fry for 25–30 minutes, flipping halfway through, until the skin is crispy and the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving. Garnish with lime wedges and herbs if desired.
