Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup red enchilada sauce
  • 1 cup shredded Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican blend)
  • 10 corn tortillas
  • 2 tablespoons olive oil

Instructions

  • Cook the Ground Beef: In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat if needed. Stir in taco seasoning and enchilada sauce. Let simmer for a few minutes, then remove from heat.
  • Prepare the Tortillas: Wrap tortillas in a damp paper towel and microwave for 30–60 seconds until pliable.
  • Assemble the Tacos: Preheat oven to 450°F (232°C). Lightly brush one side of each tortilla with olive oil and place oil-side down on a baking sheet. Sprinkle cheese on one half, add beef mixture, then top with more cheese. Fold into taco shape.
