Crispy chicken thighs are the ultimate combination of juicy, tender meat and golden, crunchy skin. This easy, budget-friendly recipe requires minimal ingredients and delivers restaurant-quality results at home. Perfect for a quick weeknight dinner or a special meal, these crispy chicken thighs pair well with mashed potatoes, roasted vegetables, or a fresh salad.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil or butter

Instructions

  • Preheat the oven to 400°F (200°C).
  • Season the chicken thighs evenly with salt, black pepper, garlic powder, and paprika.
  • Sear the chicken: Heat a large oven-safe skillet over medium-high heat and add olive oil or butter. Place the chicken thighs skin-side down and cook for 5-7 minutes until the skin is golden and crispy.
  • Bake the chicken: Flip the thighs, then transfer the skillet to the oven. Bake for 15-20 minutes or until the internal temperature reaches 165°F (75°C).
  • Rest and serve: Remove from the oven, let the chicken rest for a few minutes, then serve with your favorite sides.

Notes

  • For extra crispy skin, pat the chicken dry with paper towels before seasoning.
  • Avoid overcrowding the skillet to allow proper searing.
  • Use a meat thermometer to ensure the chicken reaches 165°F (75°C).
  • Try different seasonings like Italian herbs, cayenne, or lemon zest for added flavor.
