Crispy Chicken Schnitzel Alfredo is a comforting dish that pairs golden breaded chicken with creamy Parmesan Alfredo pasta. The crunchy schnitzel contrasts perfectly with the rich, smooth sauce for a hearty and satisfying meal.

Ingredients

  • 2 large chicken breasts, thinly pounded
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable oil for frying
  • 12 oz fettuccine or preferred pasta
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, paprika, salt, and black pepper.
  3. Dredge each chicken breast in flour, dip into the eggs, and coat with the seasoned breadcrumbs.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Fry the breaded chicken for 4–5 minutes per side until golden brown and fully cooked.
  6. Transfer the chicken to a paper towel-lined plate to drain excess oil.
  7. In a separate pan, melt butter over medium heat and sauté the minced garlic until fragrant.
  8. Pour in the heavy cream and bring to a gentle simmer.
  9. Stir in the grated Parmesan cheese until the sauce becomes smooth and creamy.
  10. Season the sauce with salt and black pepper.
  11. Add the cooked pasta and toss until evenly coated in the Alfredo sauce.
  12. Plate the pasta and place the crispy chicken schnitzel on top.
  13. Garnish with chopped parsley and extra Parmesan if desired.

Notes

  • The chicken can be baked at 400°F (200°C) for 18–20 minutes instead of frying for a lighter option.
  • Sautéed mushrooms or spinach can be added to the Alfredo sauce.
