Crispy Chicken Ciabatta Sandwich features golden, crunchy chicken layered inside soft ciabatta bread with fresh vegetables and a creamy spread. This hearty sandwich delivers the perfect balance of crisp texture and savory flavor.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs or panko
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • 4 ciabatta rolls
  • 4 lettuce leaves
  • 1 large tomato, sliced
  • 4 slices provolone or mozzarella cheese (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard

Instructions

  1. Slice each chicken breast in half horizontally to create thinner cutlets.
  2. Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs mixed with paprika, garlic powder, salt, and black pepper in a third bowl.
  3. Dredge each cutlet in flour, dip into egg, then coat thoroughly in the breadcrumb mixture.
  4. Heat about 1/2 inch of vegetable oil in a skillet over medium heat.
  5. Fry the chicken for 4–5 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
  6. Lightly toast the ciabatta rolls if desired.
  7. Mix mayonnaise and Dijon mustard in a small bowl.
  8. Spread the sauce on both sides of each roll.
  9. Assemble with crispy chicken, lettuce, tomato, and cheese if using.
  10. Serve immediately while warm and crispy.

Notes

  • Bake at 400°F (200°C) for 18–20 minutes for a lighter option.
  • Air fry at 375°F (190°C) for 12–15 minutes, flipping halfway.
  • Add cayenne or hot sauce for a spicy version.
  • Store cooked chicken separately for up to 3 days or freeze for up to 2 months.
  • Reheat in the oven to maintain crispness.
