Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Lightly grease the rack.
  2. Pat chicken thighs completely dry with paper towels to remove excess moisture.
  3. In a small bowl, mix salt, black pepper, garlic powder, onion powder, paprika, thyme, and baking powder.
  4. Rub chicken thighs with olive oil, then coat evenly with the seasoning mixture on both sides.
  5. Arrange chicken skin-side up on the prepared wire rack, leaving space between pieces.
  6. Bake for 35–45 minutes, until the skin is crispy and internal temperature reaches 165°F (74°C).
  7. Broil for 2–3 minutes at the end for extra crispiness, watching carefully to avoid burning.
  8. Remove from oven and let rest for 5 minutes before serving.
