Creamy Tuscan Chicken is a one-skillet Italian-inspired dish with golden-seared chicken breasts smothered in a luscious garlic-Parmesan cream sauce with sun-dried tomatoes and spinach. It’s rich, flavorful, and ready in just 30 minutes.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (or thighs)
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1/3 cup sun-dried tomatoes (oil-packed, drained and chopped)
  • 3 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • Optional: 1/4 teaspoon crushed red pepper flakes
  • Optional: chopped fresh basil or parsley (for garnish)

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add more oil if needed, then sauté garlic for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in chicken broth and heavy cream. Stir and bring to a simmer.
  6. Add Parmesan cheese and stir until melted and sauce is slightly thickened.
  7. Add baby spinach and cook until wilted.
  8. Return chicken to the pan and spoon sauce over the top. Simmer for 2–3 minutes to heat through.
  9. Garnish with chopped basil or parsley. Serve hot.

  • Use boneless thighs for juicier meat.
  • Swap sun-dried tomatoes with cherry tomatoes for a fresher taste.
  • Use coconut cream and dairy-free cheese for a dairy-free option.
  • Add mushrooms with garlic for extra flavor.
