Ingredients

For the Skillet:

  • 8 oz (225 g) bowtie pasta
  • 1 lb (450 g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup (240 ml) sour cream or heavy cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup (150 g) sweet corn kernels
  • 1 cup (100 g) shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons olive oil
  • ¼ cup (60 ml) reserved pasta water
  • Salt and black pepper, to taste

Optional Garnishes:

  • Fresh parsley or chopped chives

Instructions

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the bowtie pasta according to package instructions until al dente.
    • Reserve ¼ cup of pasta water, then drain and set aside.
  • Brown the Ground Beef:
    • Heat olive oil in a large skillet over medium heat.
    • Add ground beef, season with salt and black pepper, and cook for 5-7 minutes until fully browned.
    • Drain excess fat and transfer beef to a plate.
  • Sauté the Aromatics:
    • In the same skillet, add chopped onion and minced garlic.
    • Sauté for 2-3 minutes until soft and fragrant.
  • Prepare the Creamy Sauce:
    • Return cooked beef to the skillet. Stir in the ranch seasoning mix until evenly coated.
    • Pour in sour cream or heavy cream, stirring to combine.
    • If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  • Incorporate Corn and Cheese:
    • Stir in sweet corn kernels.
    • Sprinkle in shredded cheese and let it melt into the sauce.
  • Combine with Pasta:
    • Add cooked bowtie pasta to the skillet, tossing to coat evenly.
    • Cook for another 2-3 minutes until everything is well combined and heated through.
  • Serve:
    • Remove from heat. Garnish with fresh parsley or chopped chives if desired.
    • Serve warm and enjoy!
