Creamy Pasta Salad is a classic, crowd-pleasing side dish made with tender pasta, crisp vegetables, and a rich, tangy dressing. Perfect for potlucks, picnics, or easy weeknight meals, it’s cool, refreshing, and endlessly customizable.

Ingredients

  • 12 ounces pasta (rotini, elbow, or penne)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon sugar (optional)
  • Salt and black pepper to taste
  • 1 cup celery, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, vinegar, sugar (if using), salt, and pepper until smooth.
  3. Add the cooled pasta to the dressing and toss to coat evenly.
  4. Stir in celery, bell pepper, red onion, cherry tomatoes, and parsley.
  5. Taste and adjust seasoning, adding any optional mix-ins if desired.
  6. Cover and chill for at least 1 hour before serving to let flavors blend.

Notes

  • Rinse the pasta well after cooking to keep it from clumping.
  • Chilling enhances flavor—prepare a few hours ahead for the best taste.
  • If the salad thickens in the fridge, stir in a splash of milk or extra mayo before serving.
  • Customize with your favorite veggies or proteins like chicken or tuna.
