Creamy Chicken & Potato Bake is a cozy, oven-baked comfort meal featuring tender chicken, thinly sliced potatoes, and a rich, flavorful cream sauce topped with melted cheese.

Ingredients

  • 46 boneless, skinless chicken breasts or thighs
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tbsp olive oil or melted butter
  • 45 potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup heavy cream or half-and-half
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup grated cheddar or mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. Season chicken with salt, pepper, garlic powder, onion powder, and paprika. Sear in a skillet with oil for 2–3 minutes per side if desired.
  3. Layer half of the sliced potatoes and onions in the baking dish, seasoning lightly with salt and pepper.
  4. Place the seasoned chicken on top of the potato layer.
  5. Layer the remaining potatoes and onions over the chicken.
  6. Whisk together the heavy cream, chicken broth, minced garlic, and thyme or Italian seasoning with Parmesan cheese.
  7. Pour the cream mixture evenly over the chicken and potatoes.
  8. Cover with foil and bake for 50–60 minutes until potatoes are tender.
  9. Remove foil, sprinkle cheddar or mozzarella over the top, and bake uncovered for 15–20 minutes until golden and bubbly.
  10. Let the dish rest for 10 minutes before serving. Garnish with fresh parsley if desired.
