Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, finely diced
  • 1 cup celery, finely diced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 pound potato gnocchi
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook 3–4 minutes until softened.
  2. Stir in garlic, carrots, and celery. Cook another 3–4 minutes until slightly tender.
  3. Sprinkle flour over vegetables and stir continuously for 1 minute to form a light roux.
  4. Gradually whisk in chicken broth to prevent lumps. Bring to a gentle simmer.
  5. Add shredded chicken, thyme, salt, and pepper. Simmer 10 minutes.
  6. Stir in heavy cream and return to a gentle simmer.
  7. Add gnocchi and cook 3–5 minutes until they float and are tender.
  8. Stir in spinach and Parmesan cheese. Cook until spinach wilts.
  9. Adjust seasoning and serve hot.

Notes

  • Avoid overcooking gnocchi to prevent gumminess.
  • Add extra broth when reheating if soup thickens.
