A rich and comforting one-pan meal made with tender chicken, smoky chorizo, and orzo pasta simmered in a creamy Parmesan sauce. Perfect for an easy yet indulgent weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 6 oz chorizo, sliced or diced
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and smoked paprika, and cook until golden and fully cooked. Remove from the pan and set aside.
  2. In the same skillet, add the chorizo and cook until it releases its oils and begins to crisp slightly.
  3. Add chopped onion and cook until softened. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add the orzo and stir to coat in the flavorful oils. Toast for 1–2 minutes.
  5. Pour in the chicken broth and bring to a gentle simmer. Cook, stirring occasionally, until the orzo is tender and most of the liquid is absorbed, about 10–12 minutes.
  6. Reduce heat to low and stir in heavy cream and Parmesan cheese until smooth and creamy.
  7. Return the cooked chicken to the skillet and simmer for 3–5 minutes until heated through and sauce thickens.
  8. Garnish with chopped parsley and serve warm.

Notes

  • Add spinach, sun-dried tomatoes, or roasted red peppers for extra flavor and color.
  • Use spicy chorizo for added heat or mild for a smokier flavor.
  • Substitute half-and-half for a lighter version.
  • Add a squeeze of fresh lemon juice before serving for brightness.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently with a splash of broth or cream to loosen the sauce.
  • Freezing is not recommended as the sauce may separate.
