Creamy Cajun Potato Soup is a hearty, one-pot soup packed with tender potatoes, vegetables, and bold Cajun spices in a velvety cream-based broth. It’s comforting, flavorful, and perfect for chilly nights.

Ingredients

  • 4 cups diced Russet or Yukon gold potatoes, peeled
  • 1 medium yellow onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 3 tbsp butter or olive oil
  • 2 tbsp all-purpose flour (or 1 tbsp cornstarch for gluten-free option)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 tbsp Cajun seasoning (adjust to taste)
  • Salt and pepper, to taste
  • Optional: 1 cup cooked smoked sausage or shredded chicken
  • Optional: Chopped green onions or shredded cheese for garnish

Instructions

  1. In a large soup pot, melt butter or heat oil over medium heat.
  2. Add onions, celery, and carrots. Cook for 5–7 minutes until softened.
  3. Stir in garlic and Cajun seasoning. Cook for 1 more minute.
  4. Sprinkle flour over vegetables and stir to coat. Cook for 1–2 minutes.
  5. Gradually whisk in the broth and bring to a boil.
  6. Add diced potatoes, reduce heat, and simmer uncovered for 15–20 minutes until tender.
  7. Lightly mash some potatoes for a thicker texture.
  8. Stir in cream or half-and-half. Simmer another 5 minutes, stirring frequently.
  9. Add cooked sausage or other protein, if using, and heat through.
  10. Taste and adjust seasoning. Serve hot with optional toppings.
