Creamy Avocado & Egg Salad Wrap Bites are a fresh and flavorful twist on classic egg salad, combining hard-boiled eggs, creamy avocado, and herbs wrapped in tortillas and sliced into bite-sized pinwheels—perfect for snacks, lunches, or party platters.

Ingredients

  1. 6 hard-boiled eggs, peeled and chopped
  2. 1 ripe avocado
  3. 2 tbsp Greek yogurt or mayonnaise
  4. 1 tsp Dijon mustard
  5. 1 tsp lemon juice
  6. 1/4 tsp salt
  7. 1/4 tsp black pepper
  8. 1 tbsp fresh dill or chives, chopped
  9. 23 large tortilla wraps (flour or gluten-free)
  10. Optional: lettuce or spinach leaves

Instructions

In a mixing bowl, mash the avocado until mostly smooth.

  1. Add chopped hard-boiled eggs, Greek yogurt or mayo, Dijon mustard, lemon juice, salt, pepper, and chopped herbs.
  2. Gently mix until combined, leaving some texture from the eggs.
  3. Lay out tortillas and optionally layer with lettuce or spinach.
  4. Spread the egg and avocado mixture evenly over each tortilla.
  5. Tightly roll up each tortilla, then slice into 1-inch bite-sized pieces using a sharp knife.
  6. Serve immediately, or chill for 30 minutes before slicing for cleaner cuts and firmer bites.
