Creamed spinach is a rich and indulgent side dish made with creamy sauce, tender spinach, and Parmesan cheese, offering the perfect balance of savory, creamy, and slightly tangy flavors.

Ingredients

  1. 2 tablespoons unsalted butter
    1 small onion, finely chopped
    3 cloves garlic, minced
    1/4 teaspoon ground nutmeg (optional)
    1/4 teaspoon ground black pepper
    1/2 cup heavy cream
    1/2 cup whole milk
    1/2 cup grated Parmesan cheese
    2 (10 oz) bags fresh spinach (or about 12 cups fresh spinach)
    1/4 cup cream cheese, softened
    Salt to taste

Instructions

Cook the Aromatics: In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic, nutmeg (if using), and black pepper. Cook for another minute until fragrant.

  1. Add the Cream and Cheese: Pour in the heavy cream and milk, stirring to combine. Let it simmer gently for 3-4 minutes, allowing the mixture to thicken slightly. Add the grated Parmesan cheese and cream cheese, stirring until the cheese is fully melted and the sauce becomes smooth and creamy.
  2. Cook the Spinach: Gradually add the spinach to the skillet, stirring frequently. Add a handful at a time, letting the spinach wilt down before adding more. Continue until all the spinach is added. Cook for an additional 3-5 minutes, stirring occasionally, until the spinach is fully wilted and tender.
  3. Season and Serve: Taste the creamed spinach and adjust the seasoning with salt and more black pepper as needed. Serve the creamed spinach warm as a side dish.

Notes

  1. For a richer flavor, add more garlic or roasted garlic to the sauce.
  2. If you want to make it vegan, replace dairy with coconut milk or almond milk and use plant-based cream cheese and Parmesan.
  3. For added heat, add a pinch of red pepper flakes or cayenne pepper to the sauce.
  4. Feel free to add sautéed mushrooms, spinach, or kale for additional texture and flavor.
