Ingredients

  • 6 oz dried chipped beef (jarred or packaged)
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/2 tsp black pepper (or to taste)
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp onion powder (optional)
  • Pinch of cayenne (optional)
  • Toast, biscuits, or mashed potatoes, for serving

Instructions

  1. Rinse the chipped beef under cold water to reduce saltiness. Pat dry and chop into bite-sized pieces.
  2. In a large skillet over medium heat, melt the butter.
  3. Whisk in the flour and cook for 1–2 minutes to form a roux.
  4. Gradually add the milk while whisking constantly, and cook until the sauce thickens and becomes smooth.
  5. Stir in the chopped chipped beef and season with black pepper and optional spices.
  6. Simmer for 2–3 more minutes, stirring frequently, until heated through.
  7. Serve immediately over toast, biscuits, or mashed potatoes.
