Cosmic Brownie Cheesecake combines fudgy brownie layers with creamy cheesecake and colorful candy toppings for a fun, indulgent dessert perfect for celebrations or any chocolate lover.

Ingredients

  • 1 box brownie mix (plus ingredients listed on box)
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup sour cream or heavy cream
  • 1/2 cup mini chocolate candies (like rainbow chips or mini M&Ms)
  • Optional: 1/4 cup crushed cookies or chocolate chips for topping

Instructions

  1. Preheat oven according to brownie mix instructions. Line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. Prepare the brownie mix batter as directed on the box. Spread half of the batter into the prepared pan.
  3. In a mixing bowl, beat softened cream cheese with sugar until smooth. Add eggs, vanilla, and sour cream (or heavy cream) and beat until creamy and fully combined.
  4. Pour the cheesecake mixture evenly over the brownie layer in the pan.
  5. Dollop the remaining brownie batter on top of the cheesecake layer and swirl gently with a knife for a marbled effect.
  6. Sprinkle mini chocolate candies and any optional toppings over the top.
  7. Bake for 30–40 minutes, or until the cheesecake layer is set and the edges are lightly golden. A toothpick inserted should come out mostly clean.
  8. Let the pan cool completely at room temperature, then refrigerate for at least 2–4 hours to chill and firm up the layers.
  9. Once chilled, cut into squares and serve. Store leftovers in the fridge.

  • Use homemade brownie batter if preferred instead of a mix.
  • Don’t overmix the cheesecake batter to avoid cracks.
  • Cool completely before refrigerating to prevent condensation.
  • Top with whipped cream and extra candies before serving for added fun.
