Ingredients

1 can (15 oz) of whole kernel corn, drained

1 cup all-purpose flour

1/2 cup milk

1 large egg

1/2 tsp baking powder

1/4 tsp salt

1/4 tsp black pepper

1/4 cup chopped green onions (optional)

2 tbsp butter, melted (plus more for frying)

Vegetable oil for frying

Instructions

  • In a large bowl, whisk together flour, baking powder, salt, and pepper.

  • Add milk and egg to the dry ingredients and stir until smooth.

  • Stir in the drained corn and chopped green onions (optional).

  • Heat a skillet or frying pan over medium heat and add a little butter or oil.

  • Drop spoonfuls of the corn mixture into the skillet, flattening them slightly to form fritters.
