Corn fritters are crispy, golden pancakes made with sweet corn, flour, and simple seasonings. Perfect as a snack, side dish, or appetizer, they’re easy to make and full of comforting flavor.

Ingredients

  • 2 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 eggs
  • 1/3 cup milk
  • 2 tbsp chopped green onions or chives (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp sugar (optional)
  • Butter or oil, for frying

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, pepper, and sugar (if using).
  2. In a separate bowl, beat eggs and milk together.
  3. Combine the wet ingredients with the dry ingredients and stir until just combined.
  4. Fold in the corn and chopped green onions or chives if using. The batter should be thick and spoonable.
  5. Heat a skillet over medium heat and add a little butter or oil.
  6. Drop spoonfuls of batter into the pan and flatten slightly with the back of a spoon.
  7. Cook for 2–3 minutes per side or until golden brown and crispy.
  8. Drain on paper towels and serve warm with your choice of dip or sauce.

Notes

  • Drain canned corn thoroughly to avoid watery batter.
  • Do not overcrowd the pan when frying for even crispiness.
  • Batter can be made ahead and refrigerated for up to a day.
  • Use fresh corn for the best flavor and texture.
  • Adjust seasoning to taste; add herbs, cheese, or spice for variation.
