Ingredients

  1. For the chicken:
    • 2 boneless, skinless chicken breasts
    • 1 tablespoon olive oil
    • Salt and pepper, to taste
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon paprika
  2. For the Alfredo sauce:
    • 1 tablespoon butter
    • 1 tablespoon olive oil
    • 3 cloves garlic, minced
    • 1 1/2 cups heavy cream
    • 1 cup whole milk
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup shredded mozzarella cheese
    • Salt and pepper, to taste
    • 1/4 teaspoon ground nutmeg (optional)
    • 1 tablespoon fresh parsley, chopped (optional for garnish)
  3. For the tortelloni:
    • 1 package (about 9 oz) cheese-filled tortelloni (store-bought or homemade)

Instructions

Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, garlic powder, and paprika. Cook for 6-7 minutes per side until golden and cooked through (internal temperature should reach 165°F). Let the chicken rest for a few minutes before slicing into thin strips.

  1. Cook the Tortelloni:
Bring a pot of salted water to a boil. Cook tortelloni according to package instructions, about 4-5 minutes. Drain and set aside.
  2. Make the Alfredo Sauce:
In the same skillet used for the chicken, melt butter and olive oil over medium heat. Add garlic and sauté for 1-2 minutes until fragrant. Add heavy cream and milk, simmer for 4-5 minutes until slightly thickened. Stir in Parmesan and mozzarella cheeses, continue stirring until the sauce is smooth. Season with salt, pepper, and nutmeg (optional).
  3. Combine the Dish:
Add the cooked tortelloni to the skillet with Alfredo sauce. Toss to coat. Add the sliced chicken on top and toss again to combine everything. Heat for 1-2 minutes to warm through.
  4. Serve:
Serve immediately, garnished with fresh parsley if desired.

Notes

  1. If you prefer a spicy version, add red pepper flakes to the sauce.
  2. You can swap the chicken for shrimp or add sautéed spinach, mushrooms, or broccoli to the dish for extra flavor and nutrients.
  3. Use half-and-half instead of heavy cream for a lighter version of the sauce.
