Ingredients

  1. 1 lb white fish fillets (cod, haddock, or tilapia)
  2. 1/2 cup all-purpose flour
  3. 1/2 cup cornstarch
  4. 1 tsp baking powder
  5. 1/2 tsp garlic powder
  6. 1/2 tsp paprika
  7. Salt and pepper to taste
  8. 1/2 cup cold sparkling water or club soda
  9. Vegetable oil for frying
  10. 1/2 cup mayonnaise
  11. 1 tbsp Dijon mustard
  12. 1 tbsp ketchup
  13. 1 tbsp hot sauce (adjust to taste)
  14. 1 tsp lemon juice
  15. 1 tsp smoked paprika
  16. 1/2 tsp garlic powder
  17. 1/4 tsp cayenne pepper (optional)
  18. Salt and pepper to taste
  19. 4 soft hamburger buns (preferably steamed)
  20. 4 slices of American cheese (optional)
  21. Shredded lettuce (optional)

Instructions

Prepare the tartar sauce: Combine mayonnaise, Dijon mustard, ketchup, hot sauce, lemon juice, smoked paprika, garlic powder, cayenne pepper, salt, and pepper in a small bowl. Mix until smooth and set aside.

  1. Prepare the fish fillets: Pat fish fillets dry with paper towels. In a shallow dish, combine flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper. Gradually add cold sparkling water and stir until the batter is smooth and thick. Heat vegetable oil in a skillet or deep fryer over medium-high heat (about 350°F or 175°C). Dip fish fillets into batter and fry for 3-4 minutes on each side until golden brown. Drain on paper towels.
  2. Assemble the sandwich: Toast or steam the buns. Spread tartar sauce on the bottom half of each bun. Add a crispy fish fillet, top with a slice of American cheese (optional), and shredded lettuce (optional). Close the sandwich with the top half of the bun and serve immediately.

Notes

  • Spicy Filet-O-Fish: Add extra hot sauce to the tartar sauce or sprinkle cayenne pepper on the fish fillets before frying.
  • Grilled Shrimp Po Boy: For a lighter version, grill the fish fillets instead of frying.
  • Vegetarian Po Boy: Replace the fish with crispy fried green tomatoes for a vegetarian option.
  • Cheese-Free Option: Skip the cheese if you prefer a lighter version of the sandwich.
