Copycat Chipotle Chicken is a smoky, spicy, and juicy grilled chicken recipe inspired by the popular fast-casual chain. Perfect for burrito bowls, tacos, salads, and more, this flavorful chicken is easy to prep and great for meal planning.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 23 chipotle peppers in adobo sauce
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or apple cider vinegar
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a blender or food processor, combine chipotle peppers, garlic, olive oil, vinegar, oregano, cumin, paprika, salt, and pepper. Blend until smooth.
  2. Place chicken thighs in a large bowl or zip-top bag and pour marinade over them. Toss to coat evenly.
  3. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  4. Preheat a grill or skillet over medium-high heat. Lightly oil the surface if needed.
  5. Cook chicken for 5–7 minutes per side until nicely charred and internal temperature reaches 165°F (74°C).
  6. Let rest for 5 minutes before slicing or chopping.
  7. Serve in bowls, tacos, salads, or wraps.
