Cookie Cheesecake Bars combine creamy cheesecake with a crunchy, flavorful cookie crust. Whether you use chocolate chip cookies, Oreos, or graham crackers, these bars are easy to make and bursting with delicious flavors. Perfect for parties or a sweet bite at home.

Ingredients

  1. For the cookie crust:
    2 cups cookie crumbs (chocolate chip cookies, Oreos, or graham crackers)
    1/4 cup granulated sugar
    1/2 cup unsalted butter, melted
    For the cheesecake filling:
    16 oz cream cheese, softened
    1 cup granulated sugar
    1 teaspoon vanilla extract
    2 large eggs
    1/4 cup sour cream
    1/4 cup heavy cream
    1 tablespoon all-purpose flour
    Pinch of salt
    For the topping (optional):
    Whipped cream
    Chocolate chips or crushed cookies for garnish

Instructions

Prepare the crust: Preheat the oven to 325°F (163°C). Grease a 9×9-inch square pan with non-stick spray or line with parchment paper. Mix cookie crumbs, sugar, and melted butter, then press into the pan. Bake for 8-10 minutes, then cool.

  1. Prepare the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract, sour cream, heavy cream, flour, and salt until combined.
  2. Bake the cheesecake bars: Pour filling into the cooled crust and smooth the top. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Let cool in the oven with the door ajar for 1 hour. Refrigerate for at least 4 hours, or overnight.
  3. Top and serve: Top with whipped cream, chocolate chips, or crushed cookies. Slice into squares and serve chilled.
