Ingredients

  • 4 meat chops (pork, lamb, or beef)
  • 2 tbsp ground coffee (finely ground, not instant)
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. In a small bowl, combine ground coffee, brown sugar, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper to create the rub.
  2. Pat the meat chops dry with a paper towel and lightly coat them with olive oil.
  3. Generously rub the spice mixture onto both sides of the chops, pressing it in to create a thick, even coating.
  4. Let the chops sit at room temperature for about 20–30 minutes to allow the flavors to absorb.
  5. Preheat a grill, grill pan, or skillet over medium-high heat.
  6. Cook the chops for about 4–5 minutes per side (depending on thickness) or until they reach your desired level of doneness.
  7. Let the chops rest for 5 minutes before serving to retain juices.
  8. Garnish with fresh herbs if desired and serve hot.
