Coconut Maple Walnut Granola is a crunchy, sweet, and nutty treat made with oats, coconut, maple syrup, and walnuts. It’s the perfect breakfast, snack, or topping for yogurt and smoothie bowls, offering a satisfying mix of fiber, healthy fats, and natural sweetness.

Ingredients

  1. 3 cups old-fashioned rolled oats
    1 cup unsweetened shredded coconut
    1 cup walnuts, chopped
    1/4 teaspoon salt
    1/2 teaspoon ground cinnamon (optional)
    1/4 cup coconut oil, melted
    1/4 cup maple syrup
    1 teaspoon vanilla extract
    1 tablespoon chia seeds or flax seeds (optional, for added fiber)

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  1. In a large bowl, combine the oats, shredded coconut, chopped walnuts, salt, and cinnamon (if using). Stir to combine.
  2. In a small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.
  3. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  4. Spread the granola mixture evenly onto the prepared baking sheet in a thin, even layer.
  5. Bake for 20-25 minutes, stirring halfway through, until golden brown and crispy. Watch closely during the last few minutes to prevent burning.
  6. Once baked, remove the granola from the oven and let it cool completely on the baking sheet. The granola will crisp up as it cools. Store in an airtight container for up to 2 weeks.
