Cloud egg crisps are light, airy baked eggs where fluffy whipped egg whites form a crisp base for rich, creamy yolks. A low-carb, high-protein twist on traditional eggs, they’re perfect for breakfast or brunch and can be easily customized with herbs and cheese.

Ingredients

  • 4 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder or paprika (optional)
  • 2 tablespoons grated cheese (optional)
  • 1 tablespoon chopped herbs like chives or parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Carefully separate the egg whites and yolks, placing yolks in individual bowls and whites in a large mixing bowl.
  3. Whip the egg whites with salt until stiff peaks form.
  4. Gently fold in cheese, herbs, and optional seasonings.
  5. Spoon whipped egg whites onto the baking sheet in four mounds, creating a well in the center of each.
  6. Bake for 3–4 minutes, until slightly golden and set.
  7. Carefully add a yolk to each well and bake for another 2–3 minutes, until yolks are just set.
  8. Remove from oven, season with pepper, and serve immediately.

Notes

  • Use freshly separated eggs for easier whipping and better structure.
  • Keep a close eye on yolks while baking to avoid overcooking.
  • Customize with cheese, spices, or herbs for added flavor.
