Classic New England Lobster Rolls are the ultimate summer treat, featuring sweet lobster meat, a light mayo-based dressing, and a buttery toasted roll. Ingredients

1 lb lobster meat (cooked and chopped)

4 soft hot dog rolls (preferably New England-style split-top rolls)

3 tablespoons mayonnaise

1 tablespoon lemon juice

1 tablespoon melted butter

1 teaspoon Dijon mustard

2 tablespoons chopped fresh chives

Salt and pepper, to taste

Instructions

  • Prepare the lobster: If using fresh lobster, boil for 8-10 minutes or until shells turn red. Remove meat from shells and chop into bite-sized pieces. If using pre-cooked lobster, simply chop.

  • Make the dressing: In a mixing bowl, combine mayonnaise, lemon juice, melted butter, Dijon mustard, and chopped chives. Stir until smooth.

  • Mix with lobster: Gently fold the lobster meat into the dressing. Season with salt and pepper to taste.

  • Toast the rolls: Heat a skillet over medium heat. Butter the inside of each roll and toast until golden on both sides.

  • Assemble: Fill the toasted rolls with the lobster mixture. Serve immediately and enjoy!

Notes

  • For extra flavor, you can add minced garlic to the melted butter for a garlic butter lobster roll.

  • Add ripe avocado slices or a dash of hot sauce for different variations of this dish.

  • Best served fresh but can be stored in the fridge for up to 2 days (lobster mixture).
