Ingredients
2 large sweet potatoes, peeled and cubed
2 tbsp pure maple syrup
1 tbsp olive oil or melted butter
1 tsp ground cinnamon
1/4 tsp salt
Optional: pinch of nutmeg or cayenne pepper
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss sweet potato cubes with olive oil or melted butter, maple syrup, cinnamon, salt, and optional nutmeg or cayenne.
Spread the sweet potatoes in a single layer on a parchment-lined baking sheet.
Roast for 25–30 minutes, flipping halfway through, until tender and golden on the edges.
Serve warm as a side dish or over salads and grain bowls.
Notes
Don’t overcrowd the pan—spread sweet potatoes in a single layer for best browning.
Use parchment paper for easy cleanup and to prevent sticking.
Add chopped pecans during the last 10 minutes for a crunchy twist.
Leftovers are great in salads or breakfast bowls.
Orange-fleshed varieties like Garnet or Jewel work best for flavor and color.
