Cilantro Lime Rice

Light and zesty cilantro lime rice made with fluffy long-grain rice, fresh lime juice, and chopped cilantro. A refreshing side dish perfect for Mexican and Tex-Mex meals.

Ingredients

  • 1 cup long grain white rice
  • 2 cups water or chicken broth
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp olive oil or butter
  • 2 garlic cloves, minced (optional)
  • 1/2 tsp salt (or to taste)

Instructions

  1. Rinse rice under cold water until the water runs clear.
  2. Heat olive oil or butter in a saucepan over medium heat.
  3. Add rice and toast for 1–2 minutes, stirring frequently. Add garlic if using.
  4. Pour in water or broth, bring to a boil, then reduce heat to low. Cover and simmer 15–18 minutes until rice is tender and liquid absorbed.
  5. Remove from heat, keep covered, and rest 5 minutes.
  6. Fluff with a fork, stir in lime juice and cilantro.
  7. Adjust seasoning and serve warm.

Notes

  • Rinsing rice prevents mushiness.
  • For brown rice, cook 40–45 minutes instead.
  • Fresh lime juice gives the best flavor, but bottled can work in a pinch.
  • Add jalapeños or red pepper flakes for a spicy variation.
