Ingredients
1 cup long grain white rice
2 cups water or chicken broth
2 tbsp fresh lime juice
1/4 cup fresh cilantro, chopped
1 tbsp olive oil or butter
2 garlic cloves, minced (optional)
1/2 tsp salt (or to taste)
Instructions
Rinse rice under cold water until the water runs clear.
Heat olive oil or butter in a saucepan over medium heat.
Add rice and toast for 1–2 minutes, stirring frequently. Add garlic if using.
Pour in water or broth, bring to a boil, then reduce heat to low. Cover and simmer 15–18 minutes until rice is tender and liquid absorbed.
Remove from heat, keep covered, and rest 5 minutes.
Fluff with a fork, stir in lime juice and cilantro.
Adjust seasoning and serve warm.
Notes
Rinsing rice prevents mushiness.
For brown rice, cook 40–45 minutes instead.
Fresh lime juice gives the best flavor, but bottled can work in a pinch.
Add jalapeños or red pepper flakes for a spicy variation.
