Ingredients

  1. 4 hoagie or sub rolls
  2. 4 slices Genoa salami
  3. 4 slices ham or capicola
  4. 4 slices pepperoni
  5. 4 slices provolone cheese
  6. 1 cup shredded lettuce
  7. 1 medium tomato, diced
  8. ¼ red onion, finely diced
  9. ¼ cup sliced pepperoncini or banana peppers
  10. ¼ cup chopped black olives (optional)
  11. ¼ cup Italian dressing (or mix of olive oil and red wine vinegar)
  12. ½ teaspoon dried oregano
  13. Salt and black pepper, to taste

Instructions

On a large cutting board, stack the salami, ham, pepperoni, and provolone. Chop into bite-sized pieces.

  1. Add lettuce, tomato, onion, peppers, and olives to the board. Continue chopping until ingredients are finely mixed.
  2. Transfer mixture to a bowl. Add Italian dressing, oregano, salt, and pepper. Toss until evenly coated.
  3. Slice rolls in half lengthwise. Spoon filling generously into each roll.
  4. Press sandwiches lightly, slice in half if desired, and serve immediately.
