Ingredients

  1. 1 1/2 cups rolled oats
    1 cup mashed ripe bananas (about 23 bananas)
    1/2 cup unsweetened cocoa powder
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    2 large eggs
    1/4 cup honey or maple syrup
    1/4 cup Greek yogurt or dairy-free yogurt
    1 teaspoon vanilla extract
    1/2 cup milk (dairy or plant-based)
    1/2 cup dark chocolate chips (optional)

Instructions

Preheat oven to 350°F (175°C). Grease or line an 8-inch cake pan.

  1. Pulse rolled oats in a food processor or blender until they reach a flour-like consistency.
  2. In a bowl, combine oat flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk mashed bananas, eggs, honey, yogurt, vanilla extract, and milk until smooth.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined. Fold in chocolate chips if using.
