Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup unsalted butter, softened (for mint layer)
  • 1 1/2 cups powdered sugar
  • 12 tbsp heavy cream or milk
  • 1/2 tsp peppermint extract
  • 12 drops green food coloring (optional)
  • 1/2 cup heavy cream (for ganache)
  • 4 oz semi-sweet or dark chocolate, chopped
  • 1 tbsp butter (for ganache)

Instructions

  1. Preheat oven to 350°F and grease or line an 8×8-inch or 9×9-inch baking pan with parchment paper.
  2. For the brownie base: Melt butter, then stir in sugar, eggs, and vanilla. Mix in cocoa powder, flour, salt, and baking powder. Spread into prepared pan and bake for 25–30 minutes. Let cool completely.
  3. For the mint layer: Beat softened butter until creamy. Add powdered sugar, peppermint extract, and cream. Mix until fluffy. Add green food coloring if desired. Spread evenly over cooled brownies and chill for 15–20 minutes.
  4. For the ganache: Heat cream until just simmering. Pour over chopped chocolate and let sit for 1 minute. Stir until smooth, then mix in butter. Let cool slightly.
  5. Top brownies with ganache, spreading evenly. Chill for at least 1 hour until set.
  6. Slice using a warm, sharp knife. Serve chilled or at room temperature.
