Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 8 oz semi-sweet or milk chocolate
  • 1 tablespoon coconut oil or shortening

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth and creamy.
  2. Add powdered sugar and vanilla extract, mixing until fully combined.
  3. Stir in graham cracker crumbs until the mixture is thick and smooth.
  4. Scoop small portions and roll into bite-sized balls.
  5. Place the balls on a parchment-lined baking sheet and freeze for about 1 hour, until firm.
  6. Melt the chocolate with coconut oil until smooth.
  7. Dip each frozen cheesecake bite into the melted chocolate, allowing excess to drip off.
  8. Return bites to parchment paper and refrigerate until the chocolate is set.
