Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup melted butter or coconut oil
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, mix mashed bananas, peanut butter, melted butter (or coconut oil), and brown sugar until smooth.
  3. Add eggs, vanilla extract, and milk. Stir until fully combined.
  4. In a separate bowl, whisk flour, oats, baking soda, salt, and cinnamon.
  5. Fold dry ingredients into wet ingredients until just combined. Do not overmix.
  6. Gently stir in chocolate chips.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake 55–65 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool in pan 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

  • Toss chocolate chips lightly in flour to prevent sinking.
  • Use very ripe bananas for best sweetness and moisture.
  • Store at room temperature up to 3 days or refrigerate up to 5 days.
  • Freeze wrapped slices up to 2 months.
  • Avoid overmixing to prevent a dense loaf.
