Ingredients

  1. For the crust:
  2. 24 chocolate sandwich cookies (like Oreos), crushed
  3. 5 tbsp unsalted butter, melted
  4. For the filling:
  5. 24 oz cream cheese, softened
  6. 1 cup creamy peanut butter
  7. 1/2 cup granulated sugar
  8. 1/2 cup brown sugar
  9. 1 tsp vanilla extract
  10. 3 large eggs
  11. 1/2 cup sour cream
  12. 1/4 cup heavy cream
  13. For the ganache:
  14. 1 cup semi-sweet chocolate chips
  15. 1/2 cup heavy cream
  16. Optional toppings: chopped peanut butter cups, crushed peanuts, chocolate shavings, melted peanut butter drizzle

Instructions

  1. Preheat oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan with foil.
  2. Mix crushed cookies and melted butter, press into the bottom of the pan. Bake for 10 minutes and cool slightly.
  3. In a large bowl, beat cream cheese and peanut butter until smooth. Add granulated and brown sugar, and vanilla.
  4. Add eggs one at a time, mixing just until combined. Stir in sour cream and heavy cream.
  5. Pour filling over crust. Place pan in a water bath and bake for 50–60 minutes, or until center is just set.
  6. Turn off oven, crack the door, and let cheesecake rest for 1 hour.
  7. Remove from oven, cool completely, then refrigerate for at least 6 hours or overnight.
  8. To make ganache, heat heavy cream until steaming. Pour over chocolate chips, let sit 2–3 minutes, then stir until smooth.
  9. Pour ganache over chilled cheesecake. Add desired toppings and chill until ganache is set.
  10. Slice and serve chilled or at room temperature.

Notes

  • Use a water bath to prevent cracks and ensure even baking.
  • For best slicing, use a warm knife and wipe clean between each cut.
  • Natural peanut butter may separate; use regular creamy peanut butter for best results.
  • Make a day ahead for the best texture and flavor.
  • Fold in mini chocolate chips to the batter for extra texture.
