Chipotle Corn Salsa is a smoky and flavorful salsa that combines sweet corn, chipotle peppers, and fresh veggies. This versatile dish is perfect as a dip, topping, or side dish, offering the perfect balance of heat, sweetness, and tang.

Ingredients

  1. 2 cups fresh or frozen corn kernels (about 2 ears of corn or 1 bag of frozen corn)
    1 medium red bell pepper, diced
    1/4 cup red onion, finely diced
    12 chipotle peppers in adobo sauce, finely chopped (adjust to taste)
    1 tablespoon adobo sauce (from the chipotle peppers)
    1 tablespoon fresh cilantro, chopped
    1 tablespoon lime juice (freshly squeezed)
    Salt and pepper to taste
    Optional: 1 jalapeño pepper, finely diced (for extra heat)

Instructions

Cook the Corn: If using fresh corn, grill or boil the corn until tender (about 5-7 minutes), then cut the kernels off the cob. If using frozen corn, thaw and drain the kernels.

  1. Prepare the Vegetables: Dice the red bell pepper, red onion, and jalapeño (if using). Finely chop the chipotle peppers and cilantro.
  2. Combine Ingredients: In a large bowl, combine the corn, bell pepper, red onion, chipotle peppers, adobo sauce, cilantro, and lime juice. Stir until well mixed.
  3. Season: Taste and season with salt and pepper. For more heat, add additional chipotle peppers or jalapeños.
  4. Chill and Serve: For best flavor, refrigerate the salsa for at least 30 minutes before serving. Serve with tortilla chips, tacos, grilled meats, or as a side dish.

Notes

  • Grilling the corn adds a smoky flavor to the salsa.
  • For a sweeter salsa, add diced mango or pineapple.
  • If you prefer less spice, reduce the amount of chipotle peppers or omit the jalapeño.
