Chickpea Snack Mix is a crunchy, flavorful, and healthy snack made from roasted chickpeas tossed with spices and optional mix-ins like nuts, seeds, and dried fruit. Perfect for on-the-go snacking or parties.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp paprika or chili powder
  • 1/4 tsp garlic powder
  • Optional add-ins: 1/4 cup roasted nuts, 2 tbsp sunflower or pumpkin seeds, 2 tbsp dried fruit, small handful pretzels or air-popped popcorn

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat chickpeas dry thoroughly using paper towels. Remove any loose skins.
  3. In a bowl, toss chickpeas with olive oil, salt, paprika or chili powder, and garlic powder until evenly coated.
  4. Spread chickpeas in a single layer on a baking sheet.
  5. Roast for 30–40 minutes, shaking the pan every 10–15 minutes, until golden and crispy.
  6. Let the chickpeas cool completely—they will continue to crisp up as they cool.
  7. Mix with your choice of add-ins like nuts, seeds, dried fruit, or pretzels.
  8. Store in an airtight container at room temperature.

Notes

  • Ensure chickpeas are dry before roasting to help them crisp.
  • Use canned or cooked chickpeas—both work well when dried thoroughly.
  • Re-crisp chickpeas in the oven if they lose their crunch.
  • Add sweet ingredients like dried fruit only after cooling.
