Chicken Taquitos are crispy rolled tortillas filled with seasoned shredded chicken and cheese, baked or fried until golden brown. They’re perfect as a snack, appetizer, or quick meal served with your favorite dips.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/4 cup cream cheese or sour cream (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder or paprika
  • Salt and pepper, to taste
  • 1012 corn or flour tortillas
  • 2 tbsp oil (for brushing or frying)
  • Optional toppings: chopped cilantro, diced tomatoes, jalapeños, sour cream, salsa, guacamole

Instructions

  1. Preheat oven to 425°F (220°C), or heat oil in a skillet for frying.
  2. In a bowl, mix shredded chicken, cheese, cream cheese (if using), and seasonings until well combined.
  3. Warm tortillas until soft and pliable.
  4. Place 2–3 tablespoons of filling on each tortilla and roll tightly.
  5. For baking: Arrange taquitos seam side down on a greased or lined baking sheet. Brush with oil and bake for 15–20 minutes until crispy and golden.
  6. For frying: Fry taquitos seam side down in hot oil for 2–3 minutes per side until golden and crispy. Drain on paper towels.
  7. Let cool slightly and serve with your favorite toppings and dips.

Notes

  • Warm tortillas before rolling to prevent cracking.
  • Use leftover or rotisserie chicken to save time.
  • Customize with veggies, spices, or sauces like buffalo or BBQ.
  • To freeze, roll taquitos and freeze uncooked; bake from frozen when ready.
