Chicken Tacos are flavorful Mexican-inspired handheld favorites with juicy seasoned chicken, soft or crispy tortillas, and customizable toppings. They’re quick to make and perfect for weeknight dinners or gatherings.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp taco seasoning (store-bought or homemade)
  • 1 tbsp olive oil
  • 812 corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar, Monterey Jack, or preferred blend)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving
  • Optional toppings: sour cream, salsa, guacamole, diced onions

Instructions

  1. Cut the chicken into thin strips or small pieces for quicker cooking.
  2. In a bowl, toss the chicken with taco seasoning until well coated.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6–8 minutes, stirring occasionally, until browned and fully cooked.
  4. Warm tortillas in a dry skillet, oven, or microwave until pliable.
  5. Assemble tacos by placing cooked chicken in the center of each tortilla.
  6. Add toppings like lettuce, tomatoes, cheese, cilantro, and optional extras such as salsa or sour cream.
  7. Squeeze fresh lime juice over the top and serve immediately.

Notes

  • Use corn tortillas for a gluten-free option.
  • Thighs add more juiciness, while breasts are leaner.
  • Grill the chicken for added smoky flavor.
  • Serve buffet-style for build-your-own taco nights.
