Chicken Scampi is a classic Italian-American dish featuring tender chicken breasts sautéed in a garlicky, buttery lemon sauce. Often served over pasta, it’s a quick and flavorful meal that combines bright citrus, rich butter, and savory garlic with succulent chicken.

Ingredients

  1. 4 boneless, skinless chicken breasts
    Salt and freshly ground black pepper, to taste
    1/2 cup all-purpose flour (or gluten-free flour)
    3 tablespoons olive oil
    4 tablespoons butter, divided
    5 cloves garlic, minced
    1/2 cup dry white wine or chicken broth
    Juice of 1 lemon
    1/4 teaspoon red pepper flakes (optional)
    1/4 cup fresh parsley, chopped
    Cooked pasta or crusty bread for serving

Instructions

Season chicken breasts with salt and pepper, then dredge in flour, shaking off excess.

  1. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  2. Cook chicken breasts for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add remaining butter and garlic; sauté for 1-2 minutes until fragrant.
  4. Pour in white wine (or broth) and lemon juice; simmer for 3-4 minutes to reduce slightly.
  5. Stir in red pepper flakes if using.
  6. Return chicken to the skillet and spoon sauce over to coat.
  7. Garnish with chopped parsley.
  8. Serve hot over cooked pasta or with crusty bread.
