Ingredients

  • 3 cups cooked chicken breast, diced or shredded
  • 1 cup red or green seedless grapes, halved
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup celery, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large mixing bowl, combine the diced or shredded chicken, halved grapes, sliced almonds, and chopped celery.
  2. In a separate small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss until evenly coated.
  4. Stir in the chopped fresh parsley.
  5. Taste and adjust seasoning if needed.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled in sandwiches, wraps, lettuce cups, or over mixed greens.

Notes

  • Add diced apples for extra sweetness and crunch.
  • Substitute pecans or walnuts for the almonds.
  • Use rotisserie chicken for convenience.
  • Mix in dried cranberries for a sweet-tart variation.
  • For a lighter version, use all Greek yogurt instead of mayonnaise.
  • Store in the refrigerator for up to 4 days. Freezing is not recommended.
