Chicken Salad Stuffed Avocados are a delightful combination of creamy, protein-packed chicken salad nestled in ripe avocado halves. This dish offers a refreshing and satisfying meal that’s perfect for lunch, dinner, or as a healthy snack.

Ingredients

  1. 2 ripe avocados
    2 cups shredded rotisserie chicken
    1/4 cup diced red onion
    1/4 cup diced celery
    2 tablespoons plain Greek yogurt
2 tablespoons mayonnaise (or olive oil mayo for a healthier option)
    1 tablespoon Dijon mustard
    Juice of 1 lemon
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley (optional)

Instructions

Prepare the Avocados: Cut the avocados in half and remove the pits. Scoop out a small portion of the flesh to create space for the filling. Rub the inside of each avocado half with lime or lemon juice to prevent browning. Season with a pinch of salt and a sprinkle of paprika or chili powder for added flavor.

  1. Make the Chicken Salad: In a mixing bowl, combine the shredded rotisserie chicken, diced red onion, diced celery, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until all ingredients are well incorporated.
  2. Assemble the Dish: Gently spoon the chicken salad mixture into each avocado half. Garnish with chopped fresh parsley, if desired.
  3. Serve Immediately: Enjoy the stuffed avocados as a light meal or snack.

Notes

  1. Spicy Kick: Add diced jalapeños or a dash of hot sauce to the chicken salad for extra heat.
  2. Herb Infusion: Incorporate fresh herbs like dill, tarragon, or chives for added flavor.
  3. Crunchy Texture: Mix in chopped nuts such as almonds, pecans, or walnuts for a satisfying crunch.
  4. Fruity Twist: Add halved grapes or diced apples for a touch of sweetness.
  5. Low-Carb Option: Serve the chicken salad in lettuce wraps instead of avocados for a lighter version.
