Ingredients

  1. 2 cups cooked chicken breast, shredded or diced
  2. 1/2 cup mayonnaise (or half mayo, half Greek yogurt)
  3. 1/2 cup celery, finely chopped
  4. 1/4 cup red onion or green onion, finely chopped
  5. 1 tsp Dijon or yellow mustard (optional)
  6. 2 tbsp fresh parsley or dill, chopped
  7. 1 tbsp lemon juice
  8. Salt and pepper, to taste
  9. Bread slices, rolls, or croissants
  10. Optional add-ins: grapes, dried cranberries, chopped nuts, sliced apple

Instructions

In a large bowl, combine chicken, mayonnaise, celery, onion, and herbs.

  1. Add mustard if using, then drizzle in lemon juice.
  2. Season with salt and pepper and stir until fully combined.
  3. Taste and adjust seasoning or add more mayo/yogurt if needed.
